Peanut butter honey cookies - The honey is the star in these cookies my mother- in law could not get enough of these cookies.
Makes about 24
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 stick of butter (softened)
1 cup brown sugar
1/4 cup of honey
1 egg
1 teaspoon of vanilla extract
1 cup creamy peanut butter
1 cup of peanut butter and milk chocolate chips.
Mix flour, baking soda and salt in a mixing bowl. Using electric mixer, beat butter, brown sugar, honey, eggs, and vanilla. Stir in peanut butter and peanut butter and chocolate chips into dry ingredients and then stir in the wet ingredients, once well combine . Place plastic wrap over the bowl and refrigerate for about 30 minutes to 1 hr or until firm.
Preheat oven 350 F. place parchment paper spray non-stick spray on paper. With hands, roll 1 heaping tablespoons of dough for each cookie into 13/4 inch diameter ball. Arrange cookies on prepared baking sheets, spacing 21/2 inches apart.
