This classic 7UP Pound Cake is rich, buttery, and perfectly moist with a light lemon flavor that comes from both lemon extract and the 7UP itself. Using soda in baking might sound different, but it’s the secret that makes this cake soft, tender, and unforgettable. This easy lemon pound cake is perfect for holidays, Sunday dinners, bake sales, or anytime you want a homemade dessert that feels special.


Ingredients 7UP Lemon Pound Cake
3 sticks salted butter, softened
31/2 cups powdered, sifted
6 large eggs
2 3/4 cups Cake Flour, sifted
¾ cup 7UP soda or lime lime soda
1 tbsp lemon juice
1tsp lemon extract
1 tsp vanilla extract
1/4 cup sour cream
1/4 cup milk
Lemon Glaze (Optional):
1½ cups powdered sugar
2–3 tbsp milk
1 tbsp lemon juice
Instructions
Preheat oven to 300°F. Grease and flour a bundt or tube pan well. In a large bowl, cream butter and sugar until light and fluffy, about 5–7 minutes. Add eggs one at a time, mixing well after each addition. In another bowl, whisk together flour and powdered sugar. Alternate adding dry ingredients and 7UP to the batter, beginning and ending with flour. Gently mix in lemon and vanilla. Do not overmix.
Pour batter into prepared pan and smooth the top. Bake for 1 hour 30 minutes, or until a toothpick comes out clean. Cool for 15 minutes, then remove from pan.
For the glaze, whisk powdered sugar, milk, and lemon juice until smooth. Drizzle over warm cake so it soaks in.
