Vegetable Fried Rice Recipe with Red Rice

Learn how to make vegetable fried rice with red rice. Super easy instead of using jasmine rice use red rice. This fried rice recipe is simple and satisfying dinner meal. Ingredients

  • 2 tablespoons Grapeseed oil

  • 4 oz portabella mushroom; sliced

  • 1/2 cup broccolini chopped

  • 1/3 cup red onion; chopped

  • 2 -3 cups of spinach

  • 2-3 greens onions; chopped

  • Handful Thai basil roughly chopped

  • 2 garlic clove ;minced

  • · 2 cup of red rice

  • 2 eggs

  • 1-2 tablespoon of butter

  • 2-3 cups water

  • vegetable bullion cube


Fried Rice seasonings:

  • teaspoon garlic powder

  • teaspoon onion powder

  • teaspoon Chinese five spice

  • teaspoon salt

  • teaspoon pepper

Fried Rice Sauce:


Instructions:

Saute red rice in and garlic in a 1/2 tablespoon of grapeseed oil for about 2 minutes then add 2 cup of water and bouillon cube to rice cover let it cook for about 40 minutes or until softened. Once cook place in freeze or fridge to cool down to pretty much cold. Or cook this rice a day or two ahead of time. Cooled rice will not steam and make your rice fry better and give it that fried rice texture.


Make the sauce add all sauce ingredients to a bowl whisk together until well combined and set aside.


In a large wok or nonstick skillet heat grapeseed oil and minced garlic over medium high heat cook for about 15 seconds stirring then add your vegetables. Broccolini,red onion, and mushrooms saute vegetables for about 5 minutes. Take out of the pan and set aside. In the same pan add spinach and green onions saute for about 2 minutes. over medium high heat. Take out of pan and in the same bowl you have your other veggies in . Add your cooled red rice to the same pan add tablespoon of grapeseed oil and butter fry for about 2-3 minutes. Push the rice to the side of the pan to create a well. Pour the eggs and cook, stirring gently, until nearly set. Toss the fried rice with the eggs. Fold in the red rice all your vegetables, Thai basil and add the fried rice sauce and stir-fry until well-coated in the vegetable mixture and beginning to toast, 2 minutes. Transfer the fried rice to bowls and serve right away.
