One of my family tradition since I was born was to have black eyed peas on New Year's Day. It symbolizes good luck for the New Year. This is my twist on black eyed peas instead of using ham hock I used Italian Chicken sausage and smoke turkey a more healthier option. Bon Appétit !
1 Smoke turkey Wing or leg
3 Italian chicken sausages, sliced inch thick
1 chicken bouillon cube
1 garlic clove
1/2 chopped green pepper
1/2 chopped jalapeno
1/2 chopped white onion
salt and pepper to taste
1 bag black eye peas
Soak black eye peas in water overnight or least 6-8 hours
In a large pot add garlic clove ,chicken bouillon cube and smoke turkey.
Cover the turkey with water and cook on medium low heat for about 2-3 hours or until the smoke turkey is tender and falling off the bone. Once turkey is finish cooking take out of pot and chop into pieces.
In the seasoned water add peppers, onions, chicken sausage and drained black eye peas. Cover the pot and cook on medium to low heat and let them simmer until black eyes peas are tender add chopped smoke turkey back in the pot. Season with salt and pepper if desired
