If you love cream spinach you will love my take on cream kale. You can eat alone as is or with chips, I prefer blue corn chips. I prefer Kale instead of spinach to me it holds up better and has a nice firm bite.
Serves 8
1 Pound of kale fresh or frozen (I prefer fresh)
1/2 stick of unsalted butter
1/3 chopped onion
6 garlic cloves finely chopped
1/4 cup of flour
1 cup of heavy cream
1/3 cup fresh Parmesan cheese
1 teaspoon smoked paprika
1/4 teaspoon nutmeg
1/4 teaspoon cayenne pepper
1tsp of kosher salt
1 tsp seasoned pepper
2 pinches of red pepper flakes
If using fresh kale , remove the stalks and major ribs and discard.
Chop roughly. Wash the kale in cold water . Place Kale in a large pot and boil for about 10-15 minutes until cooked.
Once cooked drain into a strainer and run cold water over kale, then drain and squeeze dry with paper towels. Set Kale aside.
Melt butter in a saute pan over medium -high heat. Add garlic and onions stirring constantly, for about 1-2 minutes. Sprinkle the flour over the onion and garlic mixture, stiring for about 3 minutes. Turn heat down to medium, make sure the mixture does not turn brown .
Once thoroughly mixed whisk in heavy cream stirring continuously, until the sauce thickens.
Season mixture with spices . Add the kale and cheese and mix well . Serve immediately , Garnish the creamed kale with red pepper flakes.
