This sandwich comes together in just about twenty minutes. Cod is the best fish to use for this. It’s light and flaky but thick. It takes breading well. INGREDIENTS
TARTAR SAUCE
3 tablespoon fresh dill
1/2 fresh lemon , using the juice
1/3 cup dill pickles, chopped
FLOUR BREADING
1cup all-purpose flour
1/4 cup cornstarch
3/4 teaspoon salt
1 teaspoon old bay seasoning, onion powder, garlic powder, season pepper
1 egg
16oz ( 2 cups)club soda or beer
FOR ASSEMBLY
4 Cod fish filets, lightly salted
4 cheddar cheese slices
4 brioche buns, toasted
frying oil , I used peanut oil.

INSTRUCTIONS
MAKE THE TARTAR SAUCE
To a bowl, combine DivineKuizine remoulade sauce , fresh dill dill pickles ,fresh lemon juice .Mix together until smooth and well combined.
PREPARE THE BREADING
To one bowl, combine all purpose flour, corn starch , spices , egg and club soda or beer.
Dip each fish filet first in the flour batter. shake off any excess batter before placing in hot oil.
FRYING AND ASSEMBLING
Heat oil to 325°F. Make sure it is not too hot.
Add the filets in, making sure not to crowd them.
Fry for 8 to 9 minutes until golden on the outside and fully cooked in the center.
Transfer to a wire rack to drain excess oil
To one of the buns add a slice cheese and toast in the oven.
To toasted buns ;add to the bun with no melted cheese add DivineKuizine remoulade sauce. Place fish , topped with DivineKuizine remoulade sauce on the bun and place bun with cheese on top of the fish . Enjoy!
