Peach is a great southern treat. I love peaches especially in the summertime when peaches are in season. Peach pie almode is my favorite hot sweet pie with cold vanilla ice cream on top. Hmmm!
This was one of my first recipes I try with my DivineKuizine Sugar Spice Mix and it was rather delicious. Much easier then having to measure out all the warm spices.
I love mini desert It makes me feel I am not eating as much because I can go overboard in the sweets department.
Makes 6-8 pies
Ingredients : Preheat oven 400 degrees
1 1/2 can of peaches
3 fresh peaches pitted and sliced
1 cinnamon stick
4 tablespoon of butter
1/2 fresh lemon juice
4 tsp of cornstarch (thickening)
1 tsp vanilla extract
3 packages, frozen pie crust
Filling:
In a large pot over medium heat , stir together the fresh and can peaches, Divine Kuzine sugar spice, and cinnamon sticks, stirring occasionally, until peaches are tender but not mushy, about 15 minutes. then add in vanilla, lemon juice, butter and cornstarch stir occasionally for about 2 to 3 minutes set aside to cool.
Flour your rolling pin and roll out pie crust to about a 12-inch round. With a knife and the mini pie plates trace around with a little 1 inch to drape over pie plate. Make two for each pie plates.
Gently fit the dough into the bottom and up the sides of the pie tin. Transfer the pie crust to the refrigerator to chill for 30 minutes.
After Pie crust has chilled mound the pie mixture in the pie shell . Place the top and bottom together as using thumb and forefingers or press with a fork. Use either cut out or a sharp knife to cut slits in the top of pie crust for steam vents.

Caramelized Pecans
1 Package of chopped pecans
2 tablespoons of butter
pinch of Sea Salt or Kosher salt
Over medium high heat melt butter and Divine Kuizine sugar spice in a frying pan once melted together add pecan and stirring occasionally until on well mix set aside to cool and top on you peach pie .
