Mother's Day Fresh Berry Dutch Pancake w/ Berry Sauce

Mother's Day is one of the most precious day of the year. Mother's are very important in our lives they bring life in the world, love us , support us, mold and steer us in the right direction. There unconditional love for their children cannot be given enough praise.

Mother's day brunch is always a big deal in our house hold my sister and I have been making breakfast for our mom since we were 5 years old . Back then we would make mommy homemade cards from school and cold cereal in bed she was always pleased and happy to see us bum bard in here room and say happy mother's day. Of course the older we got the more advanced the breakfast/brunch became.

I read an interesting article on Mother's Day celebration.com about how mother day came about here is some of the interesting facts:

The earliest history of Mother's Day dates back to the ancient annual spring festival the Greeks dedicated to maternal goddesses. The Greeks used the occasion to honor Rhea, wife of Cronus and the mother of many deities of Greek mythology.

Early Christians celebrated a Mother's Day of sorts during the festival on the fourth Sunday of Lent in honor of the Virgin Mary, the Mother of Christ. In England the holiday was expanded to include all mothers. It was then called Mothering Sunday.

The idea of official celebration of Mothers day in US was first suggested by Julia Ward Howe in 1872. An activist, writer and poet Julia shot to fame with her famous Civil War song, "Battle Hymn of the Republic". Julia Ward Howe suggested that June 2 be annually celebrated as Mothers Day and should be dedicated to peace. She wrote a passionate appeal to women and urged them to rise against war in her famous Mothers Day Proclamation, written in Boston in 1870. She also initiated a Mothers' Peace Day observance on the second Sunday in June in Boston and held the meeting for a number of years. Julia tirelessly championed the cause of official celebration of Mothers Day and declaration of official holiday on the day. Her idea spread but was later replaced by the Mother's Day holiday now celebrated in May.

Anna Jarvis is recognized as the Founder of Mothers Day in US. Though Anna Jarvis never married and never had kids, she is also known as the Mother of Mothers Day, an apt title for the lady who worked hard to bestow honor on all mothers.

Today Mothers Day is celebrated in several countries including US, UK, India, Denmark, Finland, Italy, Turkey, Australia, Mexico, Canada, China, Japan and Belgium. People take the day as an opportunity to pay tribute to their mothers and thank them for all their love and spport. Now after I have given a history lesson of what traditions we do in our home and how Mother's Day became nationally. Let me share one of my favorite brunch ideas:


Dutch Pancake


Serves 8

3 eggs

3/4 whole milk or Almond milk (little healthier)

6 tablespoons of butter, melted

3/4 cup all purpose flour

1/2 cup powdered sugar

1/2 cup water

6 sliced strawberries

1/2 cup blackberries

1/ cup raspberries

1/2 lemon juice

1/2 cup of sugar

1 can pineapple juice



Heat oven 425F

Whisk eggs, milk, melted butter, powered sugar in medium bowl until blended. Stir in flour. Once blended add about a spoon and half of berries in batter.



Melt 3 tbsp butter in the cast iron skillet, pour batter into skillet over medium high heat. bake until pancake is puffed and lightly browned, about 20 minutes. Serve immediately, Drizzle with fruit sauce.



Fruit Sauce

Combine the berries, lemon juice, pineapple juice, sugar and water in a mixing bowl . and refrigerate for about an hour .
