Ingredients: Southwest Eggrolls

For the seasoning:

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon seasoned pepper

  • 1/8 teaspoon cayenne pepper

  • 1/2 teaspoon complete seasoning

  • 2-3 teaspoon DivineKuizine Jerk seasoning ( more tsp you use it going you dish hotter)

  • 1/8 teaspoon olive oil

For the Eggrolls:

  • 1 tablespoon olive oil

  • 1 chicken breast fillet about 6 oz or 5-4 chicken tenders

  • 3/4 cup shredded Mexican Cheese Blend

  • 1/3 cup frozen or fresh corn

  • 1/3 cup fresh or canned black beans drained

  • 1/4 cup colored bell pepper finely chopped

  • 1/4 cup red onion finely chopped

  • 1/4 cup frozen or fresh spinach

  • jalapeno peppers diced

  • 1-2 tablespoon heavy cream

  • eggroll wrappers or 6″ flour tortillas

  • Frying Oil I used peanut oil but you can use whatever oil you prefer

For the dipping sauce:

  • 1/4 cup DivineKuizine remoulade sauce

  • avocado

  • 2 tablespoon half and half

  • cilantro

  • jalapeño

  • lime

  • garlic clove

  • 1 teaspoon olive oil


    Instructions:

    To make the dipping sauce, add all ingredients to blender or food processor. Blend for one minute. Serve in a small bowl.

  • Finely dice the chicken, bell peppers, and onion into small, uniform pieces.

  • Season with all the spices and DivineKuizine Jerk seasoning mentioned earlier, and drizzle with olive oil. Set aside or marinate if time allows.

  • Thaw the spinach and squeeze out the water, or use fresh spinach that is cleaned and patted dry. Chop it finely.

  • In a large skillet over medium-high heat, add cooking oil and sauté the chicken until fully cooked. Remove the chicken from the pan.

  • In the same pan, add all the filling ingredients and stir together.

  • Let it cook for about 3 minutes, stirring occasionally, then reduce the heat to medium-low. Return the chicken to the pan, add the half and half and cheese, and stir to combine. Allow the cheese to melt slowly into the mixture.

  • Let the filling cool.

  • Place the filling into the eggroll wrappers (or flour tortillas), ensuring not to overfill.

  • To roll, lay the wrapper on a flat surface, moisten the corners, fold the left and right edges over the filling on each end. Fold the flap closest to you over the filling, press it firmly, and roll it up tightly.

  • Heat oil in a heavy skillet to 375 degrees. Fry the eggrolls on all sides for about 3 minutes, watching carefully to prevent burning.

  • Transfer to a wire rack to cool. Cut diagonally in half to serve.
