Easy Tostada Recipe-Ground Turkey+Video

Simply irresistible crispy tostadas. Who does not like a crispy crunch tortilla shell piled with creamy beans, grated cheese, juicy ground, turkey ,beef or shredded chicken fresh shredded lettuce, bright tomatoes, jalapenos, and creamy sour cream yummy! I made these with ground turkey but you can make with whatever protein you would like.






Let's Get Started:

Homemade Black Beans

I like making my own Homemade Black Beans but can black beans are just as good.


Makes about 8 (1/2 cup) servings

1 pound (450 grams) dried black beans, rinsed (about 2 cups)

2 medium cloves garlic, peeled and gently smashed, use more for garlicky beans

1/3 medium peeled onion, see notes

teaspoon salt, pepper, chili powder and cumin

chicken or vegetable bullion cube

3-4 cups Water


Season and Cook Ground Turkey:

Heat the olive oil over medium high heat. season ground turkey with teaspoon salt, pepper, smoke paprika ,onion powder, garlic powder, chili powder , and cumin powder. Add1/2 cup of water and let it simmer for 6-8 minutes or until fully cooked.


Fry Tortillas:

  • Grape Seed oil, Peanut oil or Extra virgin olive oil

  • 12 corn tortillas

Pour enough oil into a frying pan so that you have a quarter inch layer of oil. Heat the oil on medium high heat until sizzling hot, but not smoking.

One at a time, fry the tortillas in the oil. Bubbles should form in the tortilla immediately as you put the tortilla in the oil, otherwise the oil is not hot enough.

Fry until golden brown on both sides, cooking about 30 seconds to a minute per side. Use metal tongs or a spatula to push the tortilla down in the oil, and to turn and lift the tortilla out of the pan, draining the excess. Place the tortilla on a paper towel-lined plate, to absorb the excess oil.


Toppings:

  • 3 1/2 cups mashed black beans, homemade or from 2 (15-ounce) cans

  • 1/2 head iceberg lettuce, (optional)

  • 2 medium tomatoes, chopped

  • 8 ounces grated Monterrey Jack, Cheddar, or crumbled queso fresco and/or cotija cheese

  • 1/2 cup finely chopped fresh jalapeno

  • dollop sour cream

  • Hot sauce or green salsa

Assembly: To prepare a tostada, spread a large spoonful of mashed beans over a tostada shell. Then add ground turkey , tomatoes, jalapenos, sour cream , cheese hot sauce.


NOTE:

Don't load the tostada too much or you'll find it difficult to eat. Eat by picking up the tostada with both hands (like a pizza slice).
