How to Make Easy Loaded Mashed Potato Cakes

These easy loaded mash potato cakes are a perfect way to enjoy leftover mash potatoes. I added bacon , chives, sour cream and cheese . Everything you want on a loaded bake potatoes. The difference between loaded bake potatoes and loaded mash potato cakes these potato cakes have a crispy outside and creamy inside. Perfection. Then I drizzled with my DivineKuizine remoulade sauce that took it to another level. Sweet , hint spice . These potatoes great as a side dish or just by themselves and very kid - friendly.






Ingredients



  • Mashed Potatoes (about 2 ½ cups -3 cups)- I used Yukon potatoes

  • 1 cups shredded white cheddar cheese -I used Kerrygold cheese

  • 3- 4 strips bacon, cooked crisp and crumbled

  • 2 green onions, chopped

  • 1 tablespoon sour cream

  • 2 tablespoon all purpose flour

  • 2 tablespoon panko bread crumbs

  • 1 tsp salt and pepper

  • 2 to 3 tablespoon vegetable oil, for frying- I used grapeseed oil

  • DivineKuizine remoulade sauce

Instructions



  • Combine the mashed potatoes, cheese, crumbled bacon, green onions , sour cream, flour, bread crumbs and salt and pepper in a large bowl and stir to combine. Tip Make sure your mash potatoes are chilled.

  • Shape the rounds into 1/3 inch thick patties using your hands. .

  • Lightly oil the bottom of a cast iron or non-stick pan with the vegetable oil over medium-high heat. Cook the potato patties for 3 to 4 minutes per side, until golden brown, and then place on a paper towel lined plate. Let cool slightly before enjoying. Drizzle with DivineKuizine remoulade sauce.
