Sweet Potato Muffins Recipe

This is the most delicious easy sweet potato muffins you’re going to ever have.

They are so incredibly moist and soft. I use two of our DivineKuizine products "Apple Fritter Mix and Sugar Spice Mix. One of the best parts is that leftover roasted sweet potatoes made this .Whenever I make sweet potato muffins, I leave a few out to eat right away, and put the rest into the freezer after they’ve cooled. All it takes is a few seconds in the microwave, and they’ll taste just as good as they did out of the oven.Not too sweet but rich enough for breakfast, these sweet potato muffins are a close cousin to the beloved pumpkin spice muffin. Our Sugar Spice has a blend of cinnamon, nutmeg, cloves, and ginger spices fills these muffins with the best flavors of fall. The potatoes are mashed and mixed into the batter which help the .moistness and tenderness. Serves 24 minis and 12 regular muffins


1 Package DivineKuizine Apple Fritter mix

1 Roasted Sweet potato (medium size)

2-3 tablespoons of DivineKuizine Sugar Spice

1 cup whole milk or half and half

8oz can chuck pineapples with juice

6 finely chopped crystallized ginger(optional)

· To prep the sweet potatoes (this can be done a day or so ahead if you want to break up the muffin-making process): Place sweet potato on baking sheet. Bake at 425 degrees for approximately 45 minutes, or until the inside is soft when poked with a fork. Remove and let cool. When the potato is cool, peel off the skin and mash the sweet potato filling with a fork or masher until any big lumps are gone.

· To make the muffins: In a large bowl pour the DivineKuizine Apple fritter mix. Blend milk and pineapple in blender until pineapples are well combined and all chucks anymore. Add milk mixture and DivineKuizine sugar spice to mash sweet potato Stir the wet ingredients into the dry ingredients.

· Pour into muffin tins/cups. sprinkle a little DivineKuizine sugar spice on top of the muffins. Bake at 325 for approximately 25-30 minutes.
