Chicken Tequila Tacos w/ Corn Avocado Salsa

Tequila and chicken collide makes the most delicious Grilled Tequila Chicken Tacos! Chicken marinates in a sweet sour, spicy marinade. Grilled to perfection, stuffed into corn tortillas with corn avocado salsa red onion, red peepers, tomatoes, fresh cilantro and avocado ; what a winning hand.

Tequila mostly cooks-off during the grilling but it tenderizes the meat beautifully during the marination and leaves a hint of flavor behind.

Also, this recipe is super easy. Other than marinating chicken, rest is as easy as switching-on the grill! . Warm a couple of tortillas on the grill, serve the corn. Enjoy these delicious tacos for any night of the week!










Serves 4

Chicken

3-4 Chicken breast

Corn tortillas


Marinade

2 jalapenos, finely chopped

1/2 cup chopped fresh cilantro

1/2 cup of lime juice

1 tablespoon chili powder

1/4 cup oregano

1 tablespoon salt and pepper

1 tablespoon smoke paprika

1 tablespoon cumin

1 tablespoon allspice

1 oz tequila

1/4 cup of grapeseed oil or olive oil


In a bowl combine all ingredients and chicken breast together. Placed chicken breast in a large ziploc bag. Refrigerate overnight or for at least 6-8 hours. Heat Grill. Remove chicken from bag, leaving as much marinade on as possible. Place chicken over medium high heat. Grill for 20 to 30 minutes depending on the thickness may be less .Turning once. Let rest before slicing.



Corn Avocado Salsa

2 cups frozen or fresh corn kernels

1 avocado, chopped

2 tomatoes, chopped

handful fresh cilantro

1 teaspoon salt and pepper

2 tablespoon lime juice

1/3 cup red onion, finely chopped

1/3 cup red pepper, finely chopped

2 tablespoon DivineKuizine sugar spice

11/2 cup DivineKuiuzine remoulade


Place corn directly on a preheated grill pan or saute pan then cook, turning occasionally, until charred and tender. Remove and let cool. if necessary .Place kernels in a medium bowl add all listed ingredients.Mix well,


Assemble

Transfer the grilled chicken to a cutting board. Slice or chop the chicken into bite-sized pieces before filling. Toast corn taco tortillas . Place in middle of tortilla chicken and top with fresh corn avocado salsa over the top. ENJOY!
