Eggplant Parmesan Bites w/ Divine Kuizine Remoulade sauce for Dipping

This recipe is quick easy, kid-friendly. This a way to get your kids to eat veggies! it’s time to forget the forks and use your fingers this easy, recipe with DivineKuizine Remoulade sauce as a dipping sauce.

These Italian classic features bite-sized nuggets of eggplant coated in Parmesan breadcrumbs and fried to crispy, golden brown perfection ;are a fun and tasty snack to serve up as an appetizer, sprinkled over a bed of pasta, or as a meal by themselves.





Ingredients:

1 eggplant

1 cup Panko breadcrumbs

2 eggs

2 tablespoon water

1 cup of flour

Vegetable or Canola for frying

Divine Kuizine Remoulade Sauce

Chopped fresh parsley ;for garnish

Directions:

Peel and dice eggplant into cubes. Place cubes in a colander and toss with salt. Set aside and let drain for 30 minutes to remove excess moisture. Combine panko bread crumbs and Parmesan cheese in a bowl. In second bowl whisk eggs and water together, third bowl place flour. Bread cubes in batches, flour egg, and breadcrumbs.
