Sweet Potato Casserole with Candied Pecans and Marshmallows

Mmm! Sweet Potato Casserole with candied pecans and marshmallow. Pureed sweet potatoes are mixed with DivineKuizine sugar spice, butter, caramelized pecans topped with marshmallows and my secret ingredient White Hennessy it just take this dish to heaven. Baked until perfectly brown and gooey. This sweet potato casserole is a huge crowd pleaser. Although the best thing about this recipe is the taste, the second best thing about it is the fact that you can prepare it ahead. It's simply creamy and delicious .

Sweet Potato Casserole with Candied Pecans and Marshmallows

Serves 6-8 servings depending on servicing size

Note: 9-or Up in servings double or triple the recipe ingredients.

Candied Pecans

1/2 cup chopped pecans

2 tablespoons butter

1 1/2 water

pinch Cayenne pepper -optional

Mashed Sweet Potatoes:

3-31/2 pounds sweet potatoes

2 eggs

2 tablespoon melted butter

4 tablespoons White Hennessy

1 teaspoon vanilla extract




Make Candied Pecans- roughly chop pecans, Add pecans ,DivineKuizine sugar spice , butter and water, to a skillet. Place the skillet over medium to medium low heat. Stir the pecans so that the DivineKuizine sugar spice and butter coats them. Cook, stirring the entire time, until the pecans look candied and smell nutty, 2 to 3 minutes. As the nuts heat up in the pan, the sauce will slowly coat them.

Sweet Potato Casserole

Preheat oven to 375°F. Grease a 2 or 2 ½ quart pan. you can use butter or cooking spray.

Roast sweet potatoes- Preheat the oven to 350°F and line a rimmed baking sheet with parchment paper or aluminum foil. Oil the potato skin Roast for 45 minutes to 1hr or until the skin has puffed up and you can easily pierce them with a fork.

Peel potatoes . Place potatoes in a mixing bowl; add eggs, melted butter, DivineKuizine sugar spice , White Hennessy , and vanilla. Mix using an hand mixer, or potato masher.

Transfer the mashed potatoes to the prepared casserole dish. Add the candied pecans and marshmallows on top of the sweet potato mash and Place in the oven until heated through and the marshmallows are toasted. 15-20 minutes.

Options: Instead of using Hennessy you can use coconut milk . Instead of using regular marshmallows use vegan marshmallows.
