Ingredients:
2 Tablespoons of Olive Oil
2 Tablespoons of Butter
1 pound of Shrimp
Seasoning Shrimp:
1 garlic clove, minced
teaspoon Old Bay Seasoning
teaspoon red pepper flakes
teaspoon salt
teaspoon shallots
teaspoon five spice
teaspoon seasoned pepper
1/2 cup coconut milk
1 package of fettuccine noodles
Thai Basil Pesto:
Handful Fresh Thai Basil
1/2 cup cashews
3 garlic cloves
Fresh Grated Parmesan Cheese
1/2 lemon
salt and pepper to taste
1 cup Olive Oil
Garnish
Parmesan cheese and Sun-Dried Tomatoes
Directions:
Add olive oil and butter garlic and shrimp. Season shrimp with all spices. Adds shallots to the pan. Sauté shrimp for about 3 minutes. Remove shrimp from pan .
Thai Basil Pesto blend all ingredients in the blender.
Add cooked pasta to the same pan you sauté the shrimp in. Add Thai Basil pesto , 1/2 cup of coconut milk and shrimp to pan . Incorporate shrimp into noodles .
Garnish with Fresh Grated Parmesan cheese and sun-dried tomatoes.
